How to Make Mexican Carrot Jalapeño Relish

How To Make Mexican Carrot Jalapeno Onion Relish
Ingredients:
4 cups white vinegar
¼ cup agave syrup
1 tsp sea salt
½ tsp coriander seeds
1 bay leaf
1 sprig oregano
8 jalapenos, sliced into rings
4 medium carrots, peeled and sliced into ¼ in. rings
1 small red onion, sliced into half moons
Directions:
Put
the vinegar, agave and salt into a medium pot and heat just until the
agave and salt dissolve. Add the rest of the ingredients and let cool
for an hour.
Transfer the mixture to a non-reactive container
with a tight fitting lid. Refrigerate overnight and the carrot,
jalapeno, onion relish is ready the next day. Store in the refrigerator
for up to 2 weeks.
