This recipe helps replicate that authentic cheesy potato when you can't

1.Melt
butter in a pan, stir in the flour and cook 1 minute. Whisk in
evaporated milk and cayenne and cook until thickened. Remove from heat
and stir in cheddar cheese. Serve over fries with ketchup.

Mac and Cheese Fritters
2 cups leftover mac and cheese
8 tablespoons pimento cheese spread
2 eggs
2 cups panko breadcrumbs
Oil, for frying
2 tablespoons chopped pimentos
1/2 cup mayonnaise
2 cloves garlic, minced
1 tablespoon apple cider vinegar
Salt and pepper, to taste
1.Preheat a cast iron skillet with 1/2-inch oil to 350 degrees.
2.Scoop
1/4 cup of leftover mac and cheese and flatten in the palm of your
hand. Place 1 tablespoon of pimento spread in the center of the mac and
cheese. Fold the mac and cheese over the spread to form fritter. Dip in
egg and dredge in panko breadcrumbs.
3.Combine in a bowl pimento, mayonnaise, garlic, vinegar, salt and pepper. Reserve.
4.When
ready to serve, fry fritters in oil till golden brown, put on paper
towel lined sheet tray and immediately season with salt. Serve with
pimento aioli.

Chicken McNuggets
2 boneless, skinless chicken breasts, cubed
4 teaspoons salt
2 teaspoons ground black pepper
1/2 teaspoon parsley flakes
1/2 teaspoon dried oregano
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/2 cup finely ground yellow corn meal
1/2 cup flour
2 teaspoons baking powder
2 eggs
1/2 cup water
Vegetable Oil, for frying
Ranch Dressing, for dipping
Honey Mustard, for dipping, add 1 tablespoon hot sauce for spicy
BBQ sauce, for dipping
Ketchup, for dipping
1.In a heavy bottomed pot heat oil to 350F.
2.In
the bowl of a food processor combine chicken, 2 teaspoons salt, 1
teaspoon black pepper, parsley flakes, dried oregano, onion powder, and
garlic powder. Process into a paste.
3.In a shallow dish combine corn meal, flour, baking powder, 2 teaspoons salt and 1 teaspoon ground black pepper.
4.Whisk together the eggs in another shallow dish.
5.Form
1 tablespoon balls of the chicken mix and flatten into a nugget shape.
Dredge nuggets in egg and flour. Add to hot oil and cook until crispy
and cooked through, about 6-8 minutes. Serve with sauces.
Frosty:
2 cups chocolate milk
1 can sweetened condensed milk
2 cups ice
1/2 cup heavy cream, whipped to soft peaks
French Fries:
2 large russet potatoes, cut into ¼-inch fries
2 cups water
1/3 cup sugar
2 tablespoons corn syrup
Corn Oil, for frying
Frosty
1.Blend together chocolate milk, sweetened condensed milk and ice. Fold in the whipped cream and serve.
French Fries
1.Combine
water, sugar and corn syrup and simmer until sugar is dissolved. Cool.
Add potatoes to the cooled mixture and soak 2 hours. Remove potatoes to a
paper towel lined tray to dry for 20 minutes.
2.Heat oil to 325F and par cook potatoes 5-7 minutes. Remove to paper towel lined sheet tray.
3.Increase
oil to 375F and fry potatoes until golden brown and crisp. Remove to
paper towel lined sheet tray and season immediately with salt. Dip into
Frosty and eat!
